Historic Cooking Workshop: Dumplings

Dumplings have been a part of a wide range of cultures dating as far back as China’s Han dynasty 1,800 years ago. Their first recipes appear in Apicius, a Roman cookery text. Come link past and present by making a 19th-century dumpling recipe. Then explore the question of what is a “dumpling” by tasting dumplings from around the world.
