A graduate of the Culinary Institute of America, his career began at Maurice Restaurant at Le Parker Meridien Hotel. He then traveled to Paris to work at the Michelin three-star Lucas Carlton as Chef de Partie Tournant. Ed opened Tropica with Restaurant Associates, was briefly at Judson Grill and then went on to the Sea Grill. He has earned an impressive collection of 14 stars in all from the New York Times for his work at such restaurants. With an extensive knowledge of agricultural practices, new and exciting ingredients are at Ed’s disposal. He creates “modern American dishes that reflect both Japanese and French techniques with an eye for presentation, dimension and color.” Ingredients at 81 are provided by the finest local farmers and fisherman and those around the globe. Ed has also made numerous appearances on NBC’s The Today Show.

The entrance lounge, bar area and main dining room are a visual feast. They are contemporary and airy, yet warm and inviting at the same time, as rich woods and fabrics create a very comfortable setting.
