About Chef Salvatore Tassa
Salvatore Tassa is the chef and owner of Colline Ciociare, a Michelin-starred restaurant located in the suburbs of Rome. He is among Italy's top-30 chefs and the leading chef of the Lazio region. Salvatore's unique culinary vision transcends gastronomic conditioning dictated by strict traditions or fads. His cooking celebrates the essence of taste by using the best possible products available in the market. It merges artisanal sensibilities with contemporary creativity.
Salvatore's vocation as a chef came from his desire to pursue a dream where his land, his home, its culture and its traditions could be better known through a gastronomic language of its own. An architect by training, Salvatore taught himself how to cook by steeping himself in cookbooks and visiting the restaurants of great chefs. He started his culinary career by taking over his family's trattoria in 1988, and in a very short period, earned his first acclaims. As early as 1992, he was awarded very high marks in the major gastronomic guides of Italy. In 1995, he earned his first Michelin star. Since then, Salvatore's acclaim has grown and today his restaurant enjoys a 17/20 rating in the Guida dell'Espresso and an 85 in the Guida del Gambero Rosso, while still proudly maintaining its Michelin star.
